Hop on a local bike for a leisure ride through the ancient town, passing remarkably well-preserved traditional houses that have withstood 200 years of weather and war. Explore the old town of Hoi An using the sense of taste. Visit a merchant house where the 7th generation descendant of the same family still makes white rose dumpling for a living.  White rose dumplings have become the ubiquitous symbol of food in this ancient town. See how the elders make it and taste some to understand the mix of Chinese and Japanese influences in Vietnamese cuisine. 

Then, make a stop at a local venue that holds the secret recipe of a herbal drink. Cycle further to a popular eatery for locals to taste the typical Hoi An noodles called Cao Lau that is not found anywhere else. Listen to the tour guide and learn about how people get water to make this noodles. Meander through small alleys and stop at a local family home to learn some basic steps on how traditional green leaf cakes are made.

Last but not least, visit the most well-known sandwich a.k.a Banh Mi all around the world and featured in international food programs. Be sure to keep some space in the stomach for dessert.  Sit by the small vendor on the roadside to have a cup of che sweet soup, the most popular dessert in Vietnamese cuisine. Relax at a local coffee shop to taste the selected Banh Mi and a glass of juice. Cycle back to your hotel (in the ancient town) with mouth-watering memories.
