Intro to Japan’s culinary culture

Japan’s culinary heritage is deeply intertwined with its cultural identity, where food is not only sustenance but a reflection of tradition, craftsmanship and regional diversity. Japanese cuisine celebrates fresh, seasonal ingredients, which account for the regional variations in its dishes.

Great emphasis is also placed on the aesthetics of presentation, where dishes are served in a visually appealing manner with meticulous attention to colour and arrangement. Intricate garnishes and fish sliced with precision showcase the skill and dedication of Japanese chefs.

EXO insider tip: Before eating, it is polite to say the phrase ‘itadakimasu,’ to express gratitude for the food and those who prepared it. After the meal, say ‘gochisousama deshita ’ to, once again, show appreciation.

What to eat?
From the delicate flavours of sushi and sashimi to the hearty warmth of ramen and curry, there’s something to satisfy every craving. Here are a few must-try dishes:

  • Sushi:  Japan’s iconic dish, features fresh slices of raw fish or seafood delicately arranged atop vinegared rice
  • Tempura: A light and crispy batter-fried take on seafood or vegetables, making it a popular side dish or main course
  • Yakitori:  A savoury delight of skewered and grilled chicken, often enjoyed with a cold beer in Japanese izakayas
  • Donburi: Donburi is a hearty rice bowl topped with a variety of ingredients, ranging from beef to fish, for a filling meal
  • Noodle dishes (Soba/ramen/Udon): Japan’s diverse noodle dishes each present unique textures and flavours, from cold buckwheat noodles to rich broths
  • Shojin Ryori: This traditional Japanese vegan cuisine is rooted in Zen Buddhism, and emphasises simple, plant-based ingredients prepared mindfully to nourish body and spirit. A great option for vegan and vegetarian travellers.

EXO Insider tip: Many Japanese dishes include dashi (fish stock) so it is important for vegetarian guests to check for this.

What to drink?

Like food, beverages hold a place of reverence in Japanese culture. Drinking culture extends to sake bars, izakaya and beer gardens, where sharing drinks strengthens bonds among friends and colleagues.

  • Sake: Sake, made from fermented rice, has been brewed for over a thousand years and is often served during formal events and religious ceremonies. Its variations, from light and fruity to rich and umami, pair beautifully with the flavours of Japanese cuisine
  • Beer: Japanese beer is light and refreshing, making it a popular choice for quenching thirst. In addition to renowned brands like Asahi, Kirin and Sapporo, there is an impressive number of craft beers from smaller, regional brewers.
  • Japanese whisky: Whisky has been produced in Japan since 1870 and has earned the respect of whisky lovers worldwide. Renowned for its smooth, complex flavours, it is often compared to Scotch.
  • Green Tea: A staple in Japanese culture, green tea is known for its health benefits and refreshing flavour. Matcha, a powdered green tea, is used in traditional tea ceremonies and can also be enjoyed as a latte in modern cafes.

EXO insider tip: When drinking with a group, wait for everyone’s drink order to arrive then toast by saying kanpai

Where to eat & drink

Japan offers a diverse range of dining experiences, from upscale restaurants to lively izakayas tucked away in a small side street. Whether in the mood for a quiet, intimate meal or a quick snack, good food is always within reach. Here are a few places to check out:

  • Izakaya: These casual pubs offer a wide range of small dishes, drinks and a lively atmosphere. A popular venue for friends and colleagues to gather, izakaya are a great place to experience Japanese food culture
  • Ramen shops: Ramen shops can be found throughout Japan, offering a variety of ramen styles. Look for long queues, as they are often a sign of good quality.
  • Sushi restaurants: From high-end sushi bars to casual chains to market stalls, there are countless options to choose from.  Kaitenzushi, restaurants that serve sushi on a moving conveyor belt, are a fun, recommended option.
  • Kaiseki restaurants: Kaiseki restaurants offer a refined, multi-course dining experience rooted in Japanese culinary tradition. Each dish showcases seasonal ingredients and balances taste, texture and presentation. Kaiseki restaurants are found in most cities and kaiseki meals are also served at ryokans.
  • Markets: During festivals, food stalls (called yatai) at street markets serve light bites. However it is frowned upon to eat and walk- it’s better to take a seat near the food stall before eating.

EXO insider tip: When using chopsticks, avoid sticking them vertically into a bowl of rice as this resembles a funeral rite. Also, note that slurping noodles is considered a sign of appreciation, not a breach of etiquette.
