A staple of Laos and Northern Thailand cuisine, these grains of rice do actually stick to your hands. But don’t worry, it’s not glue, plus it is edible and a good companion to several types of food. You’ll love it!

Why is it so sticky? It ‘s because these grains of rice are cultivated without gluten as well as almost no amylase (a type of starch) but having high amounts of amylopectin (another type of starch). Sticky rice is cooked using a cone-shaped woven bamboo basket that almost looks like a conical hat. The bottom of the basket fits into a tall pot and a lid covers the top of the basket while the rice is being cooked over a burner. Added water produces steam that cooks the rice.

So, what can be eaten with sticky rice? Well, just about anything. Try it with chicken, pork, beef or even vegetable and soup dishes. Grab a piece of rice, stick your desired food to the rice, roll it into a ball and enjoy. Use your hands for an authentic Lao and Isaan eating experience. Sticky rice can also be added with coconut milk and eaten as a dessert, usually with mangoes or durians.

www.exotravel.com/

Have you tried sticky rice?
